The Illicium name comes from Illicium Verum, the Latin name for Star Anise. Star Anise is our most frequently discovered spice note and the design on our capsule. The other meaning of Illicium is ‘Enticing’ and we aim to make this wine to fit its name.

Tasting Notes

This is a bright glass of juicy and delicious red. The powerful and persistent fruit is layered with multifaceted spice and an accompaniment of floral aromas. The dense fruit satisfies the palate and is well harnessed within a structure of mellow oak. The long finish predicts a wine that will entice for several years.

Vinification

The Shiraz is from old vines established in the time of our grandfathers. The Cabernet Sauvignon is from our own plantings back in the mid-1990s. The generosity of the 2021 vintage allowed us to give this great expression. The varieties are fermented separately. Twelve months in barrel offers a better-balanced structure.

Vintage

Good ground cover formed from winter rains bolstered the vineyards through a warm and dry spring. Problem free flowering led to even berry development and a stable and relatively easy vintage. Natural acidity was once again the gift of the cool lake breeze. Langhorne Creek had cooler nights than the coolest parts of the Adelaide Hills and this meant a long growing season. We were still harvesting until mid-April. The above average yields are a blessing as the fruit is amazing.
